Recipe (CS 901)

Cape Sable Historical Society

These are various recipes for the Owaissa Rink Club. Some of the recipes inclue: Oatmeal Cookies, Tomato Mince Meat, Gingerbread, Cheap Marble Cake, Orange Marmalade, Coconut Buns & Cheese Straws, Cream Pie & Custard Pie, etc. The recipes are all different sizes.

Rye Muffins
1 cup of rye flour
1 cup white flour
1 teaspoon salt
4 teaspoons baking powder
1/4 cup sugar
1 cup milk, 1 egg
Mix and sift dry ingredients add remaining ingredients; beat well. Bake in hot gem pans twenty or thirty minutes

Egg Muffins
2 cups flour                            1 cup milk
1 teaspoon salt                      2 eggs
3 teaspoons baking powder  3 tablespoons
                                              melted butter
Mix and sift ingredients. Add beaten yolks, butter and milk. Beat well; [cut?] and fold in the stiffly beaten whites. Turn into gem pans; bake in hot oven ten to fifteen minutes. Three tablespoons sugar may be added if desired

Coconut Cake
2 cups sugar. add  beaten white of 3 eggs. Beat well. Add 1 [tablespoonfull?] cornstarch. Beat - Put on stove & heat through, but not let boil or scald. Stir if [illegible] will stick so to pan. Remove from fire Cool slightly. Then add 1/2 [illegible] grated coconut [illegible]. [Drop?] from teaspoon into well greased pan. Moderate oven - Not cool enough for the cakes to run, but may [scorch?] [early?]
